I'm not even a mom yet and it's already difficult for me to find time to cook! I know when little ones come along, my time will be even more spent. Makes me appreciate all the time my mom put into making food for us growing up. When I was balancing school, work, and keeping up the house I only had the energy to throw a pizza in the oven! Although, I've found that with quick and smart tricks in the kitchen I can make my life a little easier.
I love my crockpot, rice cooker, and George Foremen grill {featured above in my make-shift pantry, which is organized chaos} because they are tools that make cooking fast and easy. My latest favorite recipe is picking up this amazing curry from Costco for $7 along with some naan bread; throwing white rice in the rice cooker, and grilling up chicken on the George Foremen grill. It is relatively cheap, easy, and only took 15 minutes tops to prepare!
All it takes is a little thinking ahead and research...meaning that I wander Costco on Saturdays trying out all the samples to see what I like ;) I don't expect myself to be perfect, or to have my kitchen cleaned and ready with a meal every single night. Which helps make my life a little easier and more stress-free!
