Give a Spooky Lindt HELLO

The Best Potato Soup (Ever)

This recipe has become one of my favorites and has been a total hit when made for parties and events! It's a thick and creamy potato soup with a little bit of a kick. Plus, it's pretty easy to make which motivates me to make it again and again. I originally found the recipe here, but here is my version. Enjoy! :)

Ingredients
4 cups of Chicken Broth
4 cups of peeled and cubed potatoes (2-2.5 large potatoes or 4-5 smaller potatoes)
1/4 cup Minced Onions
1/2 tsp seasoning salt
1/4 tsp pepper
1/4 tsp ground or crushed red pepper
1 pkg (8oz) cream cheese 

Optional
Salt & pepper to taste
Shredded cheese
Bacon bits 

Step 1: Wash and peel potatoes  

Step 2: Cube/cut potatoes 

Step 3: Combine cubed potatoes, minced onion, spices, and chicken broth in pot. Then let boil on MEDIUM heat for about 20 minutes until potatoes are tender 

Step 4: Smash a few potatoes with whisk to release their starch for thickening 

Step 5: Reduce to LOW heat and mix in a small piece of cream cheese at a time until it is melted in the mixture. Then continue adding more until you've used the entire cream cheese package

Garnish with shredded cheese and bacon bits, then stuff your face with this amazing soup!

Casual Fall Style + The Job Hunt

This is my second look (check out my first here) styling the wine floppy hat! Knit grey sweater, teal cords, booties, and lots of gold jewelry are my fall jam. On another note, I've been on the post-grad job search for the past few weeks and wow is it life-sucking! I'm applying like crazy and getting help from some awesome friends, so I'm keeping the faith that I'll find a job that's a good fit soon. Cross your fingers for me! :)

Let the Leaves Fall

I tweeted a while back that I really wanted to try out a fall floppy hat without feeling like a poser. I was urged by some fellow tweeters to take the plunge, and I did! Isn't that what fashion is all about, taking chances? So this is the first of two outfits that I styled with my new hat and I'm excited to share them with you. Especially since the the leaves are starting to change color which means cooler weather is starting to come our way. Hoorayyyyyyyy! :)

Adventures With Elder Evs: 6 More Months

It's crazy to think that Elder Grossman has less than 6 months until he is back in the states!! We are all super excited for his return :) In the meantime, here's an update! He has been transferred to the big city of Villahermosa and is training his new companion Elder Galindo from Monterrey who he says is "willing to learn and really fun to talk to." 


He absolutely loves his new apartment and area because "THERES AN AIR CONDITIONING UNIT" (a direct quote, yes in all caps) in his room. Elder G has reported to sleeping way better at night with it, and he is extremely content. Plus they have fun stores and restaurants such as: Dominos, Pizza Hut, Subway, and Dairy Queen nearby. Hooray! Anyways, the pictures and stories in this post are from the last few weeks in his previous area of Reyes Aztecas! :)

The above pictures are from a ward activity Elder G and his companion put together in his previous area. "We started up activities in the ward here. We played volleyball and had water balloons, and with these activities we are getting attention from people who aren't members which is really cool."


These are pictures of their investigator Zamyra and her family at her baptism! 

"We had some birthdays this past week: first, our new convert! She turned 16. It was small, but an awesome party! Singing mañanitas and cakes in peoples faces. After her 'mordita' her brother splashed her with a bucket of water. It was funny, but she didn't think it was funny. We also got her a cake, which was super good!! We found out the following day that it was made with a tiny bit of alcohol :(" 
(We all wrote to Evan that when cooking with alcohol, it eventually burns off so he shouldn't feel as bad)

"We had an Elder that had a birthday too! We got him a different cake, so not to repeat our previous mistake. We even asked the person to make sure it wasn't made with any alcohol or coffee. A member told us later that the cake we bought was made with a little bit of coffee. I now officially hate all cakes in Mexico :(" 

"I have my whole district here! Me, Elder Ortiz, Elder Rivera, Hermana Sanchez, and the Holy Ghost in between Hermana Wyndham and Elder Florido :)"
